This dish features “Beni Haruka,” a sweet potato variety from Kyushu, paired with seasonal chestnuts. We showcase seasonal sweet potatoes through a variety of cooking methods and textures, including a chilled sweet potato dessert soup, fried sweet potatoes, and sweet potato catalana. By layering sponge cake, chestnut whipped cream, and candied chestnuts and sweet potatoes, then enveloping the entire creation in Mont Blanc cream, we’ve crafted a dish that offers a rich variety of flavors in a single serving. The decoration is themed around “Tsukimi” (moon viewing), evoking the serene nighttime scenery of a Japanese autumn night. We’ve scattered autumnal motifs across the plate, including sweet potato chips, sablés, yellow macarons shaped like the moon, and ginkgo tuiles. ~A Variety of Flavors~ Chilled sweet potato soup, fried sweet potato, sweet potato catalana, sponge cake, whipped chestnuts, candied chestnuts and sweet potatoes, sweet potato yōkan, Mont Blanc cream, sweet potato chips, rabbit-shaped sablés, lemon macarons, ginkgo tuiles, cotton candy (orange flavor), and osmanthus syrup

We’ve paired “Toyomitsu Hime” figs from Fukuoka Prefecture with cassis. We showcase seasonal figs through a variety of cooking methods and textures, such as a chilled fig dessert soup and fig catalana. Layers of dried figs and fig yōkan are combined with cassis cake, whipped cream, and Fukuoka-grown Kyoho grapes, all enveloped in a cassis and fig Mont Blanc cream. The decoration, themed around the “Autumn Harvest Festival,” vibrantly captures the bountiful autumn season. Adorned with sliced figs, maple-leaf sablés, red macarons evoking an autumn sunset, and ginkgo tuiles, this dish embodies the bounty of fall. ~A Variety of Flavors~ Chilled Fig Dessert Soup · Fig Catalana · Dried Figs · Cassis Cake · Whipped Cream · Kyoho Grapes and Figs · Fig Yokan · Cassis and Fig Mont Blanc Cream · Sliced Figs · Maple Leaf Sablés · Berry Macarons · Ginkgo Tuiles · Cotton Candy (Grape Flavor) · Osmanthus Syrup

A dessert cocktail perfect for long autumn nights, featuring an apple bourbon base and a sweet, toasty aroma reminiscent of apple pie. With apples—a quintessential fall flavor—taking center stage, we’ve used round ice cubes to symbolize the “moon,” evoking the scene of moon-viewing. Caramelized apples are used as a garnish. This not only brings out the apple’s natural sweetness but also adds a toasty, apple-pie-like flavor. Additionally, when the accompanying cranberry sauce is added, the cocktail—which starts as a pale golden hue reminiscent of apple flesh—gradually transforms into a deep, autumnal color. This drink allows you to experience the deepening of autumn through both its taste and the changing hues as you watch the color evolve.

A frozen dessert drink made with Kyushu-produced mascarpone and Yame Japanese black tea, combined with burdock root and chocolate—two quintessential fall ingredients. By blending burdock root into a rich royal milk tea infused with chocolate, we’ve created a unique fall flavor unlike anything you’ve tasted before. The mascarpone lends a rich, tiramisu-like texture and smooth mouthfeel, creating a drink where the rich aroma of Yame Japanese black tea, the depth of chocolate, and the unique flavor of burdock root harmoniously blend together. You can customize the flavor by adding the separately packaged chocolate sauce infused with burdock aroma to your liking, or enjoy it drizzled over the “DIG Mont Blanc.”
